Perry started working vintages at Cape Mentelle at fourteen, studied winemaking by distance education while chasing harvests through France, Spain, New Zealand and California, then came home to build a low intervention project on organically and biodynamically farmed fruit. The winery itself is now certified organic.\u003c\/p\u003e\u003cp\u003eTinto is Shiraz drawn from the organically farmed Osmington vineyard and made in a nouveau style for early drinking. Medium bodied at most, it leads with vibrant red fruit and peppery spice over a fine but firm structure, finishing dry and savoury with a juicy, slippery texture. Best served lightly chilled.\u003c\/p\u003e\u003cp\u003eFermentation is wild, in open bins, using whole bunches and whole berries. The wine is basket pressed off to tank before the sugar has finished so the ferment completes slowly, moves through malolactic fermentation naturally, then is racked and blended ahead of bottling.
