How is non alcoholic beer made?

Beer is made by fermenting a grain, usually barley but there are also wheat beer types, and adding some yeast into the fermented grain to feast on the natural sugars. The grain is usually mashed to crack open the glorious sugars and tastes of it first, then mixed with hot water to make the wort. This process is known as steeping the grain in much the same way that you steep a cup of good tea. Once the water is full of the sugary and starchy goodness of the barely, it becomes a wort. Here you'll find the hops added into the brew for taste. The wort is boiled and then separated from the malted grain and hops and cooled, to be ready for fermentation.

Yeast is a naturally occurring organism which eats sugar and produces ethyl alcohol and carbon dioxide as its waste products. The bubbles in beer are created by this process, just like the alcohol is. But the beer doesn't have to be alcoholic. In fact, small beer has been around since the Middle Ages.

Historically, humans haven't been great at protecting their drinking water from rogue agents like bacteria which make drinking water super unsafe. Not really knowing what bacteria was but managing to work out that the local river - where the mining waste, the tanner's waste and the butchers left overs were dumped - somehow didn't taste right and was making everyone sick, they did something about it, they created a low alcoholic drink. In order to do this, they had to treat the water to make it safe to drink and that treatment was their fermentation recipe.

Is non-alcoholic beer really alcohol free?

Alcohol can be removed, or significantly lowered, after the fermentation process to create non alcoholic beer. In the Middle Ages, this was because everyone had to drink the small beer to stay hydrated and whatever passed for healthy in the age of the Bubonic Plague, so taste and crafting a real tasting beer wasn't as important. Now, however, times have significantly changed.
