What is rum made from?
Rum is a distilled spirit traditionally and more widely made from fermented sugar cane molasses but can also be made from fresh sugar cane juice. Tasting notes between the two types differ with rhum agricole (French rum), made from fresh sugar cane juice, often offering grassy freshness on the palate and some pleasantly fruity combinations. This type of rum is available as both a dark and a white rum and is made and distributed from the French Caribbean island of Martinique.
Whether made from traditional molasses or sugar can juice, the distillation process is the same. First the liquid of choice molasses, cane juice or cane syrup is mixed with water and cultured (usually) or naturally occurring yeast. This produces the wash' which is a substance resembling beer and contains about 5 to 10% alcohol. This wash is what the rum distillery uses to distil the finer spirit of rum from.
It's firstly within the fermentation process that the flavour profile of your rum begins it complex construction. Yeast creates alcohol and carbon dioxide by eating the sugars from the primary ingredients, and it also creates a host of other chemical reactions known as congeners which affect the flavour of each individual brand and type. These are expertly experimented with using a range of different yeasts to produce the full spectrum of delectable rum flavours available today. If you come across rum making terms like three-step or four-step fermentation process, then that refers to the way the yeast is introduced to the wash. The sugar cane wash is so dense with nutriment that yeast needs some time to adjust to the smorgasbord available to them and set to work properly on producing ethyl alcohol and the all-important flavour makers, the congeners. Congeners determine the flavour in all distilled spirits so you will doubtless come across the term on your other alcohol testing odysseys within the worlds of botanical gin, festive tequila and mezcals, bold and pure vodka and the enormous international world of whiskey and whisky.
Throughout distillation, the congeners begin to diminish as the liquid becomes more and more refined through concentration. The fewer the congeners in the final product, the lighter the rum will be, while the more congeners that remain, the darker or heavier the final rum product. As a general rule, lighter rums tend to go through a shorter fermentation process while heavy rums are fermented longer, producing a thick and syrupy final product. Some makers will blend the two products together to produce more complex tasting notes like Mount Gay XO Extra Old Rum which contains a blend of rums aged between 8 and 15 years.
