Archie Rose Distilling Co. was founded in Sydney in 2014, the first whisky distillery in the city in more than 160 years, and moved into a purpose-built facility in Botany in 2020. The distillery is known for its grain-led approach, including a process in which each malt in the mash bill is milled, mashed, fermented, distilled and matured separately before being brought together.
This is a single cask expression of the Rye Malt, drawn from one barrel and bottled at natural cask strength without dilution. Rye malt sits between a classic single malt and a big, spicy American rye, so expect baking spice and cracked pepper alongside vanilla, caramel and toasted oak, with a fuller, more rounded texture and a long, warming finish. Cask strength bottling gives it noticeably more concentration than the core release.
Made from malted rye rather than the unmalted rye typical of the style, alongside specialty malts, and distilled in copper pot stills. Maturation takes place in custom virgin American oak casks built from wood air dried for around three years, which drives the vanilla and spice character. Single cask releases are drawn from individual barrels, so each one carries its own profile and the outturn is limited.
