Elysian Springs Pinot Noir 750ml

The wine in question pays homage to a natural spring situated within the estate's premises, marking the source point of the River Torrens that meanders through Adelaide's bustling city center. Handpicked during the chill of early dawn, entire bunches of the estate's most distinguished Pinot Noir were selected and then destemmed, ensuring the fruit was kept intact. A portion, equating to 30%, underwent whole cluster fermentation, while the surplus fruit was crushed and subjected to traditional open fermentation along with an extended skin contact of 30 days. Subsequently, the wine was decanted into a mix of new and seasoned French oak hogsheads, comprising 50% of each type. Bottling of the wine followed immediately, skipping fining and with only minimal filtration, in an effort to retain the rich taste and texture of the Pinot Noir. The desire is for the pristine essence of the silent waters to resonate profoundly within this wine.
