Established in 2011 by Paul Hletko, FEW Spirits is located in an old chop-shop in a secluded alleyway in Evanston, Illinois, where it crafts flavor-rich whiskey and gin. The brand derives its name from the initials of Frances Elizabeth Willard, a historical figure who championed prohibition and was instrumental in maintaining Evanston as a dry city from 1855 to 1972.

The distillery presents a blend of Southern tradition and Northern rye in its product, employing age-old distilling techniques and a three-grain recipe to capture the essence of Southern heritage, the spice of Northern rye, and the smoothness of malt. Its bourbon whiskey is meticulously handcrafted through a small-batch process and aged in charred oak barrels.
