Four Pillars Sherry Cask Gin 500ml

Four Pillars Sherry Gin is a rich, unique spirit, aged in Sherry wine barrels. These old barrels, between 15 and 35 years old, are never emptied - a small bit of each barrel is removed, and then replaced with gin from the barrels above. This careful aging results in remarkably smooth gin, with all the impurities and rough edges, smoothed out and the individual botanicals melded into a luscious bouquet. The sweetness of Sherry adds more depth of flavour and amazing complexity. Delicious flavours of dried figs and berries highlight the deeper cassia and star anise spices, integrating them into the woodsy underpinning of juniper and pine. Adding a tiny amount of Spanish Amontillado sherry has added some length and sweetness to the final gin.
