Double Wood is Hinch Distillery's take on the classic Irish blend, marrying single malt and single grain whiskey at their County Down home near Ballynahinch. The name points to the maturation: at least four years in first fill bourbon casks, then a further year in virgin oak that sharpens the spice and deepens the colour.
The nose is sweet and creamy, zesty lemon peel sitting over vanilla with a faint whiff of tobacco leaf. The palate follows with vanilla cream and mocha, while cinnamon and oak spice give it more grip than the average easy going blend.
Honeyed orchard fruit carries the long finish, joined by melon, milk chocolate and a lingering trace of spice. An approachable Irish whiskey with enough structure to hold its shape in a highball.
