I made a study of gin during the extended Covid lockdowns in Melbourne. In that time I systematically went through about forty bottles of gin, including many new local boutique varieties, and classic imported gins. I drank them with soda as this is the best way to taste the actual gin, in the same way I only ever drink vodka on ice. (Drinking gin with tonic is for children.) Lind & Lime was my favourite of all, and is the gin I continue to drink today (still only with soda). This stuff tastes wonderful. It is slightly spicy with great citrus balance, an intoxicating scent, and goes a magnificent opalescent colour when mixed with water. It feels more like an hallucinogenic when you keep drinking, rather than an alcohol, (I have conducted extensive research on that subject too). Highly recommended, but don't ever buy the last bottle and shut me out.
