Tomich Wines is a family owned producer based at Woodside in the Adelaide Hills, with three generations of history in viticulture and winemaking. The estate covers around 320 acres in the Onkaparinga Valley, sitting between roughly 365 and 400 metres above sea level and split into 27 individual blocks, each farmed according to its own terroir. The family works to a philosophy of giving more back to the land than they take.
Altitude and a cool climate give this Shiraz a medium-weight, elegant style rather than the density of warmer South Australian regions. Look for smoky spice and dark forest berries on the nose, then a palate of mulberry, plum and peppery black fruits lifted by milk chocolate and fine, powdery tannins. Fruit purity and fresh acidity carry it through to a long, structured finish.
Fruit is grown on slow-ripening hillside blocks and vinified in small parcels to preserve site character. The wine is matured for around 18 months in a combination of French and American oak, used to build texture and length without overwhelming the fruit.
