Boann PX Cask Single Pot Still Irish Whiskey 700ml

Boann Distillery sits on the banks of the river Boyne in County Meath, a family run operation that revived single pot still whiskey with an unusually generous mash bill. Alongside the traditional malted and unmalted barley, the recipe brings in oats and rye, which gives the spirit more spice and texture than the pot still norm.

This release was matured in Oloroso sherry hogsheads from Bodegas Garvey in Jerez de la Frontera, then finished in old Pedro Ximénez solera casks. That second cask is the one doing the heavy lifting, and it shows.

The nose is decadent, raisin and fig over molasses, sweet caramel and a hint of leather. The palate is syrupy and full, sticky date and black cherry alongside honey, dark chocolate, a savoury cured note and cracked white pepper, with clove and nutmeg spice behind. The finish is long and earthy with lingering caramel.
