Horin is Gekkeikan's premium flagship sake, brewed in the historic Fushimi district of Kyoto by one of Japan's most storied sake houses. The blend draws on two prized sake-rice varieties, Yamada Nishiki and Gohyakumangoku, polished down to fifty per cent of the grain so that only the purest starchy core remains. The result is a refined Junmai Daiginjo that has earned a reputation as one of the brewery's most decorated releases.
The bouquet opens with a delicate fruity aroma, layering creamy rice and banana with fresh honeydew, melon and Asian pear. On the palate it is round and silky with a medium, well-balanced body, lifted by gentle acidity and a touch of sweetness. Green apple and pear notes give way to a deeper umami core of mushroom and roasted chestnut, before a long, polished finish.
Best enjoyed lightly chilled and served in a white wine glass to draw out its full aromatic range. It pairs effortlessly with sushi, sashimi, lightly seared fish or grilled poultry, and is equally rewarding sipped on its own.
