Pedro Domecq is one of the great names of Jerez, founded in 1730 and recognised as one of the oldest sherry houses in the Andalusian triangle. Their Fino Dry is a classic expression of the region's most refreshing style, biologically aged under a protective layer of yeast known as flor that shields the wine from oxidation and lends it a distinctive crisp, savoury character.
Pale straw in the glass, the bouquet opens with green apple and lemon zest, layered with the trademark Fino notes of toasted almond, fresh bread and a whiff of sea breeze. The palate is bone-dry, light-bodied and lively, with flavours of bruised apple and salted cashew leading into a clean, mineral-driven finish.
Serve well-chilled in a small wine glass, straight from the fridge. It is a classic aperitif partner for green olives, marcona almonds, jamón, fried seafood, and Spanish-style tapas. Best consumed within a few weeks of opening to preserve its delicate freshness.
