The Plantation Fiji 2001 is a pot still distilled offering that has been aged for 19 years in bourbon casks and subsequently matured for a year in Ferrand casks. The whisky is then finished for four months in Rozelieures single malt cask, resulting in a complex and nuanced flavor profile. On the nose, the whisky is intense, offering aromas of custard, banana flambé, peach, hazelnut, quince, and seaweed, with the scent of marzipan and orange emerging as it develops. The palate is tropical, with a gentle smokiness and a fresh character that is predominantly defined by passion fruit and citrus flavors. The whisky also boasts vanilla and fresh herbal notes, such as mint and eucalyptus, with a mineral quality that evokes charcoal.
