The Two Paddocks flagship wine is a meticulously crafted, organic barrel selection sourced from the estate properties. In 2022, this wine was produced from four Neill family Central Otago vineyards, which are small, high-density sites planted with a range of clonal material and cropped to below 5 Tonne per hectare. The majority of vineyard practices are carried out by hand, emphasizing the handcrafted nature of the wine. Traditional methods such as 46% whole bunch, indigenous fermentation, and hand plunging are employed to produce a wine that showcases the richness and elegance of the fruit. The wine is matured for 11 months in French barriques, with a mix of older and new (18%) barrels. The resulting wine boasts tasting notes of red cherry, plum, blackberry bramble, and spice aromatics, with a rich, warm texture that exudes lush fruit, softness, elegance, and poise.
