Grown on the Scorpo family vineyard, the fruit is hand-picked, whole bunch pressed and sent directly to old (4 years and older) French barriques. Along with wild yeast fermentation, old barrels accentuate the savoury side of this aromatic variety and also help produce complex flavours, whilst still retaining plenty of fruit character. Mouth-watering, refreshing acidity is assured by stopping malolactic fermentation. The lees are not stirred. The wine is bottled after 10 to 12 months. Suitable for vegans.
This charismatic and energetic wine has a good mix of fruit and savoury elements. Orange rind, preserved lemons, lychees and custard apple are present on the nose in a fruit salad of ingredients. The palate is oily, viscous and opulent whilst maintaining a linear backbone. Dried apples, fresh pear and orange blossom feature on the palate, whilst a hint of pork rind complements the oily texture. - Paul Scorpo
