The Stefano Lubiana Sauvignon Blanc, cultivated entirely from estate-grown, single-vineyard, certified-biodynamic grapes, thrives in a blend of grey gravelly loam over gravel and red loam over an ancient riverbed. This biodynamic wine distinguishes itself with expressive aromatics and a delicate fragrance, defying the typically pungent nature of Sauvignon Blanc. On the palate, it presents a vibrant acidity and liveliness, embodying a remarkable subtlety and elegance uncommon to this varietal. The wine's notable texture is a result of low crop yields and prolonged lees aging. Fermentation occurs using a balanced mix of 50% stainless steel and 50% large format Austrian oak, as meticulously curated by Steve and Monique Lubiana.
