The term sur lie often refers to winemaking, where the juice rests on the grape mash for a vibrant flavour. With The West Winds Gin distillery, creating the Sur Lie Gin with the addition of lees. The result is remarkably smooth and deeply aromatic. An underlying vanilla character adds complexity and a firm foundation for the beautiful aromas of coriander, lemon, and cinnamon myrtle. While the palate is rich and flavourful, this also delicate, with rose and orange blossoms predominant. It's very well-balanced, with a long, smooth finish, perfect as a base in a gin cocktail that features floral ingredients.
