Wills Domain Mystic Spring Rose 750ml

This wine primarily originates from a southern Margaret River vineyard with decade-old vines situated on a subtle southwestern slope. Our goal was to create a refined, dry Rose, hence the fruit was harvested at 12Be, ensuring limited red skin color and precise, firm flavors. The fruit was gathered in the early morning, basket pressed promptly, allowing the juice to settle, then inoculated with X5 cultured yeast. Post a cool fermentation process, the wine was stabilized, filtered, and bottled. COLOR: Extremely subtle, elegant salmon pink. AROMA: Graceful pomegranate, accompanied by mild floral essences. TASTE: Firm, dry, and subtle, offering ample strawberry notes on the mid-palate. The elevated carbon dioxide content amplifies the palate's freshness and liveliness, concluding with a finely balanced lingering acidity.
