Natural warming, along with careful plunging and gentle pumping over, was employed to extract maximum color and flavor. Cooling during the middle of fermentation extended the process, effectively utilizing time on skins to enhance the wine's structure and length. Some batches remained on skins until dryness, while others completed fermentation in barrel, resulting in a harmonious integration of oak characteristics and an elevated texture and complexity.
