Abasolo is a groundbreaking whisky from Jilotepec de Abasolo in central Mexico, made entirely from corn and widely recognised as one of the first whiskies to celebrate Mexico's deep grain heritage. Rather than the dent corn used in most whiskies, it is distilled from Cacahuazintle, an ancestral non-GMO variety that local farmers have cultivated for generations and prized for its large, soft, flavourful kernels.
What sets Abasolo apart is nixtamalization, a traditional technique thousands of years old that has long been used to prepare corn for food across Mexico but had never before been applied to whisky. The corn is soaked and cooked before being washed and hulled, unlocking flavours that ordinary milling leaves hidden. The spirit is then double pot distilled and matured in a combination of used and lightly toasted American oak.
The result is a whisky with a character all its own: warm roasted corn at its heart, layered with honey, vanilla, black tea and a savoury hint of leather. Smooth and distinctive, it offers a genuinely different take on grain whisky and a taste of Mexican craft and tradition.
