Ruby Abyss is the pinnacle of Lark's new luxury single malt range, crafted in Tasmania and aged exclusively in 100% first-fill vintage Port and Sherry casks from Seppeltsfield Wines — including a century-old Australian Port reserve. This is a whisky of extraordinary depth and richness.
The nose reveals steeped pears in aged dessert wine, amber raisins, caramelised Demerara sugar and a whisper of salted macadamia. On the palate, lush plum preserve folds through chocolate sauce, with buttery croissant layers and a drift of earthy peat. The finish lingers with deep fortified oak warmth, spiced golden treacle, candied quince and umami.
