Wolfburn 10 Year Old Sherry Cask Single Malt Scotch Whisky 700ml
Wolfburn is the most northerly whisky distillery on mainland Scotland, sitting on the edge of Thurso in Caithness. The original Wolfburn was founded in 1821 and grew to become the largest distillery in the county before falling silent later that century. The name was revived in 2013 on a site close to the ruins of the original, drawing its water from the same Wolf Burn that gave the distillery its name.
This 10 year old marked a milestone for the revived distillery as its first permanent age statement release, and it is matured entirely in sherry wood. The nose leads with soft sherry sweetness alongside figs and raisins, with vanilla and oak sitting underneath. The palate is deep and generous, built on bold chocolate and dark fruit flavours with overtones of caramel and vanilla, accompanied by gentle hints of nutmeg and oak smoke. Silky tannins carry a beautifully textured finish, where a residual sweetness of dried fruit and caramel lingers to the end.
The spirit is double distilled in copper pot stills at Thurso and matured on site for a full decade in hand-selected second-fill Oloroso sherry casks of Spanish oak. It is bottled at natural colour and without chill filtration.
